The juice is barrel fermented in a mixture of new and second use French oak 225 litre barriques and larger 500 litre puncheons. Half of the barrels are lees stirred weekly, and allowed to undergo secondary malolactic fermentation, introducing a savoury, rich textural complexity to the finished wine. The
